EASY TOMATO CONFIT from @kalejunkie! 🍅 If you have a lot of tomatoes (even the ones starting to wilt), MAKE THIS IMMEDIATELY! The tomatoes cook down with the fresh garlic and herbs, into the dreamiest spread that you can use for literally anything, and store in the refrigerator to use over the course of a few weeks!⁣

I used mine on top of toast with burrata, but it’s fantastic on avocado	toast, on pasta, salads, straight from the jar, etc!⁣
⁣
How to make:⁣
3-4 cups baby tomatoes⁣
1/4 cup olive oil⁣
6 cloves fresh garlic⁣
1 tablespoon lemon zest (which is ~ 1 lemon, zested)⁣
2 teaspoons dried thyme⁣
3/4 teaspoon sea salt⁣
⁣
Add tomatoes to a large pan over medium-high heat, followed by the olive oil and remaining ingredients. Stir to coat, and after about 5 minutes, reduce heat to medium. Cover and let cook for another 35 minutes or until the tomatoes have blistered and the garlic is soft. You will need to remove the cover ever few minutes to stir. Once cooked down, turn the heat off, remove the lid and use a spoon to further mash the tomatoes and garlic. Once cooled, transfer to a jar, cover, and store in the fridge for up to 2 weeks. Enjoy!⁣
