Meal Prep Idea! SHAVED BRUSSELS SPROUTS SALAD with dijon vinaigrette! Follow kalejunkie for more recipes! This is another fantastic recipe that you can batch prep and enjoy all week because there’s no lettuce so it won’t get soggy and the flavors get better over time! If you find cleaning/chopping/shaving brussels sprouts a pain 🙋🏻‍♀️, this is one of those instances where I love taking the shortcut and buying pre-packaged and feel like the extra $ is worth it. But that’s just me, you do you! Whatever you decide, MAKE THIS SALAD ASAP, it’s incredible, and you can add any of your favorite mix-ins. Don’t want walnuts? Leave it out or add something crunchy and yummy in it’s place.  Here’s how to make it!⁣

Salad:⁣
5 cups shaved brussels sprouts (I bought pre-packaged)⁣
1 apple of choice 🍎 
1/3 cup dried cranberries or chopped dates⁣
1/3 cup pumpkin seeds⁣
1/3 cup chopped walnuts⁣
1/2 cup shaved parmesan cheese ⁣
⁣
Dressing:⁣
1/4 cup olive oil⁣
3 tablespoons lemon juice⁣
2 teaspoons red wine vinegar⁣
1 tablespoon maple syrup⁣
2 teaspoons dijon mustard⁣
Salt & pepper to taste ⁣
⁣
In a small bowl, whisk together all of the ingredients and set aside. Next, in a large bowl, add all of the salad ingredients. Pour the dressing on top and coat well. Let the salad sit for 15-20 minutes, so the Brussels sprouts soften a bit and the flavors really soak in. Serve and enjoy! Store leftovers in a covered container in the refrigerator for up to one week.⁣
