GIANT LEMON POPPYSEED COOKIE 🍋🍪, serving size 1 or 4, that decision is up to you, but we all know what I would do 🤷🏻‍♀️! 👉🏼 follow @kalejunkie for more fun recipes! This recipe is a Spring twist on my popular Vegan Giant Chocolate Chip Cookie (recipe for that on blog), and let me tell you, this one is DELISH! It’s soft, it’s lemony, and I’m convinced you won’t want to share!  Recipe will be up on the blog soon, but in the meantime, here you go! And ps—don’t skip the icing, it’s the best part!⁣

Makes 1 giant cookie⁣
1 flax “egg” (1 TB ground flax + 2 TB water)⁣
1/3 cup almond flour ⁣
1/4 TSP baking soda⁣
Pinch salt⁣
2 TSP poppyseeds⁣
3 TB cashew butter (I used @georgiagrinders)⁣
1 TB maple syrup⁣
1 TB lemon juice and 1 TB lemon zest⁣
1/4 tsp lemon extract (OPTIONAL)⁣

Icing⁣
1 TSP lemon juice⁣
3 TB powdered monk fruit (I used @lakanto) or powdered sugar (if not paleo)⁣

Preheat oven to 350F. Line a baking sheet with parchment and set aside. Prepare flax “egg” - mix together the flax and water and set aside to thicken. In a small bowl, whisk together the dry ingredients. Next, add the wet, and mix everything together well. Using a spoon, transfer the ball of dough to the baking sheet. Using a greased spatula or spoon, gently press it down and form a cookie shape (see video). Bake for 13-15 minutes, until golden brown on top. Let cool completely. Prepare the icing by whisking together the lemon juice and powdered sugar. Once cookie has cooled, drizzle on top. Add more poppyseeds and lemon zest if desired. ENJOY! 😋 ⁣
