BACON PANCAKE DIPPERS from @kalejunkie 🥓🥞 // I made these the other day using apples dipped in pancake batter, but this time decided to try with crispy bacon, and WOW! The perfect combination of sweet and savory in one little bite. I cooked the bacon in my air fryer, so the fat drips off and the bacon is nice and crispy (which is essential so you don’t end up with soggy bacon pancakes!). If air frying, try 400F for 10 minutes. Other cooking methods work too, of course! How ever you decide to do it, I cannot wait for you to try these. ⁣

Makes 2-4 servings 😉 ⁣
8 slices bacon, cut into pieces⁣
1 cup pancake batter prepared according to package instructions (I used @birchbenders)⁣
1 teaspoon cinnamon⁣
Maple syrup for dipping (optional)⁣
⁣
Prepare pancake batter and set aside. Cut bacon into pieces about 2-3 inches. Cook bacon using preferred method until nice and crispy. Next, heat a pan on the stove over medium heat. Spray with avocado oil or oil of choice. Dip each bacon piece into the batter and place on pan for about 2 min, uninterrupted. Then flip to the other side and cook for 1 minute more. Repeat process with all the bacon pieces. Sprinkle with powdered sugar, if desired, then dip in maple syrup and enjoy!⁣
