Cranberry Orange Carrot Cake 🥕🧚🏻✨ During the holidays I reimagine one of my favorite cake recipes! The addition of warming spices like cinnamon, nutmeg, allspice and ginger really drive home the holiday nostalgia. The cranberries add a bright burst of flavor to every bite. The cake is also decorated with mushrooms by yasminbochi, sugared cranberries, flowers from my garden (yes it’s still in full bloom) as well as cake crumb moss!
2 cups all-purpose flour
2 tsp baking soda
1/2 tsp salt
2 tsp ground cinnamon
1 tsp ground ginger
1/2 tsp ground nutmeg
1/4 - 1/2 tsp ground allspice
1 cup white sugar
1 cup dark brown sugar
1/2 cup butter (softened)
1/4 cup oil (vegetable/light olive/etc)
3 large eggs
3/4 cup buttermilk
Zest of 1 large orange
2 tsp vanilla extract
2 cups grated carrot
1 cup fresh cranberries (halved)
1 cup crushed pineapple (drained)
1 cup chopped pecans

Preheat oven to 350°. Prepare desired cake pans. I used 4 six inch pans. Grease the pans and line the bottoms with parchment paper. Lightly grease the parchment paper. 
In a bowl combine the flour, baking soda, salt, and spices. Set aside. 
To your mixing bowl add the butter, oil, and sugar. Mix well until light and fluffy (1-2 minutes). Add in the eggs one at a time and mix until incorporated. With the mixer on low, add in the flour mixture and the buttermilk alternating between wet and dry ingredients until both are evenly incorporated. Stop the mixer and scrape the sides of the bowl. Add in the orange zest, vanilla, carrots, cranberries and pineapple. Mix until evenly incorporated. Add the nuts and fold in by hand. Pour batter into prepared pans. Thank 
Bake at 350° for 25 to 30 minutes or until
a wooden pick inserted in center comes
out clean. If using bigger pans you will need to adjust cooking time. 
Allow the cakes to cool in pans on a wire rack for 20 minutes. Remove the cakes from the pans and allow to cool completely on wire racks.
