## Caption

Ep 24 This is one of my favorite rice cooker recipes! Apologies for mixing units of measurements. I usually eyeball the chicken, carrots, and aburaage but figured I should provide some kind of measurement as a guide!

As usual the water to rice ratio may differ depending on the rice you use. Cooking times may also differ depending on your rice cooker! My rice cooker is a 2 cups uncooked or 4 cups cooked size! 

Ingredients

1/2 us cup medium grain rice
1/2 us cup hot water
3 dried shiitake mushrooms
1/2 tbsp soy sauce
1/2 tbsp sake
1/2 tbsp mirin
3-4 oz chicken, cut into small pieces
2 oz carrots, cut into small pieces
2 oz aburaage, cut into slices

1. Wash and soak the rice for about 20minutes. This will help the flavors seep into the rice!
2. While the rice is soaking, rehydrate the dried shiitake mushrooms with the water. Optionally you can add a dashi packet too for extra umami
3. Squeeze the excess liquid from the rehydrated shiitake, slice, and set aside. Add additional water if necessary to get 1/2 cup of mushroom dashi.
4. Drain the soaked rice and add to the rice cooker pot along with the dashi, soy sauce, cooking sake, and mirin. Stir
5. Place the chicken, carrots, aburrage, and sliced shiitake. DO NOT STIR IN
6. Cook!
