Makes 24 bites

Ingredients:
1 10 oz. sheet puff pastry, thawed
1 small wheel (about 8 oz) Brie, cut into ½-inch cubes (you’ll need 24 pieces)
1/4 cup fig jam
2 oz prosciutto, torn into small strips
1 egg, beaten
Fresh thyme for garnish
Flakey salt for garnish (I use harmonyblends Citrus Finishing Salt)

Instructions:
Preheat the oven to 400 degrees.
Lightly flour a cutting board or your countertop and roll out the puff pastry into a 10x10-inch square. Cut the puff pastry into 24 equal squares and press each square into the well of a mini muffin tin. (You can also use a standard muffin pan and do two batches.)
Add a tiny dollop of fig jam into each pastry cup and top with a cube of Brie. Add a piece of prosciutto on top. Brush exposed pastry with egg wash.
Bake for 14-17 minutes, or until the pastry is golden and puffed. Let cool slightly, then sprinkle on fresh thyme leaves and flakey salt.

Make-Ahead Tips:
Assemble up to 1 day ahead: Fill the muffin tin, cover with plastic wrap, and refrigerate unbaked.
For best texture, bake right before serving, but you can rewarm leftovers in the oven for 5 minutes at 300°F.
