Roasting garlic cloves in olive oil allows them to become mild, caramelized, and tender enough to spread with a butter knife.

Covering peeled, whole cloves of garlic with oil and cooking them until the cloves lose all of their bitterness and instead become delicate, slightly sweet, and buttery-soft, is a serious game changer.  The added bonus is all the garlic infused olive oil that you get which can be used in cooking; marinades, salad dressings or just as a dip for crusty bread

Preheat oven to 375F. Pour cloves Into a baking dish. Cover them with olive oil and bake for 30-40 minutes or until golden and completely fork tender. Allow them to completely cool and then pour into a jar, making sure that the cloves are submerged in the oil. 

** important to note that you do have to be mindful of handling the roasted garlic correctly. DO NOT store roasted garlic in olive oil at room temperature, this provides perfect conditions for producing botulism toxin. 
After roasting, cool completely, add to a clean jar and make sure that the garlic is completely submerged in the oil. Refrigerate immediately and it can last up to 2 weeks in fridge 

***Pre-peeled garlic is so convenient when roasting it so if I am making a large amount I will buy it.
But I’m really particular about which brand I use because many companies don’t use ethical practices to peel the garlic. I will buy a big bag of organic thechristopherranch pre peeled from Costco. They are a great company from California who uses machinery to peel their garlic 

***I go through this roasted garlic very quickly during the week. It’s excellent to throw a few cloves in mashed potatoes or Mac and cheese.  Add to sauces or gravy.  Spread on sandwiches or corn on the cob.  Add some to salad dressings or your favorite hummus recipe.  When making hamburgers, add some to the ground beef. Use as a base for a pizza or mix some with butter and spread on grilled cheese.  Mix some with mayo and spread on your Thanksgiving Turkey this year before roasting!
