The perfect game day potato: spinach artichoke twice baked potatoes using my goto, breakstones Sour Cream. Bake russet potatoes and then scoop out the middles and add to some butter and scallions before combining it with all the classics of spinach artichoke dip. Top with mozzarella cheese and bake again until everything is all browned and bubbly. So easy and so so good. Enjoy!
