My husbands Mother passed away when he was 16 yrs old and there are certain dishes that I make often because she made them and I know they remind him of her. Food memories are so real and so powerful and I love leaning into them. 
One of those dishes from his childhood is the classic green bean casserole made with Campbell’s cream of mushroom soup that he remembers her making every Thanksgiving. 

I gladly make it for him every year because he loves it and that is what’s important, but I put my own spin on it.  I make mine  with homemade cream of mushroom soup and onion rings 😊
I’m sure his Mom would have approved ❤️

*this can be completely set up the day before and covered, without the onion rings. Park in the fridge overnight and when ready to bake off the next day, top with the onion rings and bake off!  No need to cook onion rings first.  Top them while frozen and they cool along with the casserole. 

**Also… Milli Vanilli….Are you old enough to remember their scandal in the late 80s?  Regardless if that, I still loved them

Homemade Greenbean Casserole with Onion Rings

5 tbls butter - divided 
1 (10oz) pkg mushrooms chopped 
3 cloves garlic chopped 
1/4 cup flour
3 cup milk 
1 tsp kosher salt
1/2 tsp black pepper
1/4 tsp cayenne 
1 cup shredded cheddar 
1 24 oz bag of frozen green beans
3 scallions, chopped 
1 bag frozen onion rings

Preheat oven to 375 F. 
Butter a 9 x 13” baking dish. 
In a large skillet, melt 3 tbls butter over medium heat. Stir in mushrooms and garlic, and saute for about 5 minutes. Add remaining 2 tbls butter and melt. Stir in flour until absorbed. Stir in milk, stirring constantly. Add salt, cayenne and pepper to taste. Bring to a simmer and stir until thickened.  Stir in cheese until melted. Remove from heat and check for seasoning. Add frozen green beans and scallions and stir. Pour into baking dish. Arrange onion rings over the top, and bake in preheated oven for 30-40 minutes until golden and bubbly
