## Caption

This quiche with a hash brown crust is a perfect dish to make for a special brunch or if you have weekend guests.  You can switch up the veggies you add to it so it’s easily customizable

3 cups raw shredded potatoes (I used Oreida brand frozen and thawed) 
4 tablespoons unsalted butter, melted
salt and pepper
1/2 an onion chopped 
3 big handfuls of baby spinach 
1 cup sweet Italian ground pork sausage
6 large eggs
1/4 cup heavy cream
2 cups shredded cheddar 
2 scallions, chopped 
1/2 tsp smoked paprika
1/2 tsp oregano 
1/2 tsp garlic powder 
1/4 tsp salt
Pinch of cayenne 

Preheat oven to 375F. Coat a 9-inch pie plate with non-stick cooking spray.
In a large bowl  toss the hash browns with the butter to coat. Season with salt and pepper. Press the hash browns into the bottom and up the sides of the plate to form a crust. Bake for approximately 25-30 minutes or until golden brown.

In the meantime, sauté the ground sausage in a skillet over medium-high heat, breaking it up with a wooden spoon, until no pink remains, about 5-8 minutes. Remove to a plate and in the same skillet saute the onions in a tablespoon of oil until tender, about 5 minutes. Add the spinach and stir until the heat of the skillet wilts the spinach.  Remove from heat and let cool a bit. 
In the large bowl you used for the hash browns, whisk together the eggs, cream, cheese, scallions and all the seasonings. Add in the cooked sausage and mix to combine.

To the crust, add the spinach and onions and pour the egg mixture on top of the that. Bake for approximately 30 minutes or until set. Let cool slightly and then cut into wedges
