chicken and wild rice soup makes the minnesotan in me so happy 🥹

chicken & wild rice soup 🤍
sear 2 chicken breasts in olive oil until golden. remove & shred.
sauté 1 yellow onion, 2 carrots, 3 celery stalks, cremini mushrooms & 3 cloves garlic in 2 tbsp butter.
sprinkle in flour to make a roux. season with chicken bouillon + a pinch of paprika.
pour in 1 carton chicken stock, add wild rice & let it simmer until tender.
stir in heavy cream, add chicken back in & let it get creamy and perfect.
serve with crusty bread and thank me later 🥹🍲
