MERE’S CHICKEN POT PIE 🥧💗

ingredients:
• 1 small yellow onion
• 4 medium carrots
• 2 small white potatoes
• 6–8 garlic cloves
• fresh thyme
• fresh rosemary
• 2 chicken breasts (~16oz)
• 5 oz pancetta
• 1 tbsp butter
• 1 cup heavy cream
• 1 egg (for egg wash)
• flour (1 ¼ cup)
• garlic powder
• onion powder
• paprika
• salt
• black pepper
• avocado oil or olive oil
• 1 1/2 cups bone broth
• 1 cup frozen peas
• 2 puff pastry sheets

instructions:
• season chicken breasts with salt, pepper, garlic powder, paprika, and a drizzle of olive oil.
• cook in a skillet or air fryer until done, then shred and set aside.

• in a large pot or dutch oven, cook pancetta over medium heat until crispy.
• remove pancetta and set aside, leaving about 2 tablespoons of pancetta fat in the pot.

• add diced onion, carrots, potatoes, and minced garlic to the same pot.
• cook until softened.

• add 1 tbsp butter to the pot.
• sprinkle in flour and stir for 1 minute.
• slowly pour in 1 cup heavy cream and 1 1/2 cups bone broth, stirring until creamy and thickened.

• add: 2–3 sprigs thyme, 2–3 sprigs rosemary, ½ tsp garlic powder, ½ tsp onion powder, ¼ tsp paprika and season with salt & pepper to taste.

• stir in shredded chicken, cooked pancetta, and frozen peas.
• simmer 5 minutes, then turn off heat.

• preheat oven to 400°f.
• lay 1 sheet of puff pastry into a baking dish or pie dish for the bottom crust.
• pierce it with a fork all over.
• pre-bake 20 minutes so it doesn’t get soggy. remove from oven.

• pour filling on top of the pre-baked bottom crust.
• lay the second puff pastry sheet on top and trim edges if needed.
• cut 3–4 small slits for ventilation.
• brush with egg wash (1 beaten egg + splash of water).
• bake ~30 minutes until golden brown.
• let rest 10 minutes before cutting and serving.
