Beef stew Ingredients:
2 lbs chuck roast
2 tbsp beef bouillon, divided
1/2 tbsp onion powder
1/2 tbsp garlic powder
1 tsp black pepper
1 tbsp all purpose flour
2 tbsp oil
1/2 white onion, diced
1 celery stalk, diced
4-5 garlic cloves
2 tbsp tomato paste
32 oz beef broth
1 cup red wine
4-5 dried bay leaves
2 fresh rosemary sprigs
2 cups of water, or as needed
2 russet potatoes, peeled & diced
1 large carrot, peeled & diced

🥘 Beef Stew Instructions
1. Season & coat the beef:
In a bowl, toss the cut up chuck roast with 1 tbsp beef bouillon, onion powder, garlic powder, black pepper, and flour until evenly coated.
2. Sear the meat:
Heat the oil in a large heavy pot over medium-high heat. Sear the beef on all sides until browned, 3-4 minutes. Remove and set aside.
3. Sauté aromatics:
In the same pot on medium heat, add the onion, celery, and garlic cloves. Cook, stirring often, for 2–3 minutes, until fragrant and softened.
4. Add tomato paste & deglaze:
Stir in the tomato paste, and cook, stirring constantly, for 1 minute. Pour in the broth and red wine, scraping the bottom of the pot to release all that flavor.
5. Build the broth:
Return the beef to the pot. Add the remaining 1 tbsp beef bouillon, bay leaves, rosemary, and water as needed to cover the meat. Bring to a simmer over medium-low heat.
6. Slow cook:
Reduce heat to low, cover, and let it simmer gently for 1½–2 hours, stirring occasionally, until the beef is tender.
7. Add veggies:
Stir in the potatoes and carrots. Cook on the stovetop over medium-low heat, uncovered, for 30–40 minutes, until vegetables are soft and the stew is thickened.
8. Final touch:
Remove bay leaves and rosemary sprigs. Taste and adjust seasoning (salt & pepper) if needed.
