Welcome to “The Short List”. A series collaboration between @hellomeridian and @selectidaho highlighting some of the most beloved dishes in Idaho. We are giving you a short list of exactly what to order, based on the opinions of the chef, the devoted fans, and Natalie of Hello Meridian, a foodie who has been exploring the Treasure Valley food scene for more than ten years, brought to life with the talent of the team at Select Idaho.

Of course we had to start with the lovely White Rabbit in Boise. @eatdrinkwhiterabbit petite restaurant on the Boise Bench known for rustic yet refined dishes, all served in a warm space with an elevated eclectic interior. Chef Sarah Kelly and her husband DK Kelly create seasonal menus that lean fresh and bright in Spring and Summer, and warm and cozy as the weather cools. It is an enormously popular neighborhood bistro for a reason.
