Stout-Braised Short Rib Mac & Cheese!

Maybe it’s not macaroni, but you get it. When the weather gets cold and the sun sets at 4:30, I want three things: a cozy hoodie, a rib sticking meal, and a good beer. That’s exactly what’s happening here.

INGREDIENTS
Short Ribs 3–3½ lb bone-in beef short ribs Kosher salt and black pepper 2 Tbsp neutral oil (canola or grapeseed) 2 carrots, chopped 1 large yellow onion, chopped 1 whole garlic head, halved 1 Tbsp tomato paste 1 (10 oz) bottle Goose Island Bourbon County Stout 2 cups (480 g) beef or veal stock 2 sprigs thyme 1 bay leaf

Mac & Cheese 1 lb (454 g) cavatappi 3 cups (720 g) heavy cream 2 cups (474 g) whole milk ½ tsp each black pepper and smoked paprika 1 star anise (optional) 1 tsp dry mustard powder 4 garlic cloves, smashed Thyme and rosemary sprigs 6 oz (170 g) each sharp cheddar and gouda 4 oz (113 g) each Gruyère, fontina, and goat cheese ½ cup (50 g) grated Parmesan Chives, for garnish

TECHNIQUE
1. Season ribs with salt and pepper. Sear in hot oil until browned, 3–4 min per side. Set aside.
2. Add carrots, onion, and garlic to the pot; cook until deeply browned. Stir in tomato paste; cook 1 min.
3. Deglaze with stout, reduce by half, add stock, thyme, and bay leaf. Return ribs bone-side down, cover, and braise at 300°F (150°C) for 2½–3 hr until tender.
4. Boil pasta 2 min shy of al dente; drain, rinse, and toss with oil.
5. Simmer cream, milk, pepper, paprika, mustard, herbs, star anise, and garlic 15 min; strain.
6. Stir in half the shredded cheeses and the goat cheese until smooth, then fold in the pasta to thicken slightly.
7. Layer pasta, short rib, and remaining cheese in a baking dish. Top with Parmesan, broil until golden, rest 10 minutes, garnish with chives, and serve with reduced braising liquid. #GooseIsland #Cooking
