For me, Stuffed Shells are one of those reminiscent meals that brings me right back to childhood. Especially at the Holidays. We never celebrated a Holiday or any big occasion without a tray of my Grandmothers Stuffed Shells.  And now, I make sure that my family doesn’t either.  The great thing about these is that it’s very easy for me to make a tray of vegetarian shells and a tray of meat stuffed shells to please everyone in the house.  The possibilities are endless with regards to what you can stuff them with making them a fun dish to put your creative spin on

Cheesy Stuffed Shells

24 jumbo pasta shells
2 cups Ricotta cheese 
1 cup frozen spinach thawed and squeezed dry
3/4 cup Parmesan (divided) 
1 egg
1 teaspoon salt
1/2 cup fresh chopped parsley (divided) 
1/4 cup fresh chopped basil
1/4 teaspoon dried oregano
1/4 tsp chili flakes 
3 cups marinara sauce (homemade or store bought) 
1 cup shredded mozzarella cheese

Preheat oven to 350F. 
Bring a large pot of salted water to a  boil. Add shells, reduce to a simmer and cook until al dente (do not over cook). Drain, and run under cold water.
Stir together the Ricotta, spinach, 1/2 cup Parmesan, egg, salt, 1/4 cup parsley, basil, oregano, chili and pepper. Place in a large ziploc bag and snip the end off.
Spread 1 cup marinara in the bottom of a pan. 
Divide Ricotta mixture evenly between shells and place in prepared pan. Top with 1 cup mozzarella cheese and 1/4 cup parm.  Cover with foil and Bake for 30 minutes. Remove the foil and bake 10 minutes more or until bubbly at the edges and cheese is melted. Top with rest of parsley and serve with the rest of the sauce so that everyone can top their own shells with more
