my BUTTERNUT SQUASH HUMMUS WITH CRISPY QUINOA is here right in time for the holidays! It is so flavorful, delicious, easy to make-and it's so pretty! The crispy quinoa on top and the pickled onions are the chefs kiss, with so many different flavors and textures happening all at once. I cannot wait for you to try this ©. Be sure to SHARE this post FOLLOW @kalejunkie for more recipes like this :) Makes 8 servings 1 cup cooked quinoa 1 tb olive oil, salt & pepper to taste 2 cups butternut squash (2 cups cubed) 2 tb olive oil 1 tsp cumin, salt & pepper to taste 115 oz can garbanzo beans, drained and rinsed 1/4 cup tahini 3 tb olive oil 1 lemon, juiced (1/4 cup) 1 tsp cumin, divided 1 tsp ground turmeric 2 cloves garlic 1 tsp kosher salt 1/2 tsp ground black pepper 1/4 cup water, if needed to thin Optional: 1/4 tsp crushed red pepper flakes Garnishes: pomegranate, pickled onions, chopped pistachios Preheat oven to 400F. Chop butternut squash and spread it onto a small baking sheet. Toss with a generous drizzle of olive oil, 1 tsp cumin, and a generous pinch of salt and pepper. Bake for 30-35 minutes, tossing the squash halfway through. Remove from oven once fork tender. Meanwhile, on another small baking sheet, add the cooked quinoa. Toss with a generous drizzle of olive oil, salt and pepper. Spread into an even layer and bake for 20-25 minutes, mixing half way through. Be sure to watch carefully so it doesn't burn. Finally, in a food processor add the roasted butternut squash, tahini, olive oil, lemon juice, cumin, turmeric, garlic, salt, pepper, and red pepper flakes (if using). Process until as smooth as possible, about 3 minutes. If your hummus is too thick, add the water. Once smooth, taste and adjust seasonings as needed. Spread hummus onto a serving plate and top with the crispy quinoa and your other garnishes-pomegranate, chopped pistachios, pickled onions, and chives. ENJOY! #hummus #hummusrecipe
