For Episode 36 we’re having cozy Creamy Tomato Tortellini Soup! This one is SUPER simple and comes together in less than 30 minutes! No, this doesn’t have 100 grams of protein per serving 🤪 Since I started this series the high protein thing has really gotten out of hand. I started this series because a lot of the easy Trader Joe’s recipes I was seeing had zero protein and were usually not balanced meals. I don’t provide macros for my recipes because some people don’t like seeing that information, but you can easily enter it into a tracking app like MyFitnessPal if that’s something you’re into 🤍 I try to make sure all of my recipes for this series have 20-30 grams of protein per serving which is a great goal for each meal of the day! Enjoy!!

Serves 4
Total time 25 min 

1 tablespoon olive oil
1 lb Italian sausage, casing removed 
1 onion, diced
3 cloves garlic, minced 
1 teaspoon Italian seasoning, optional 
1 teaspoon kosher salt, plus more to taste 
1/4 teaspoon black pepper, plus more to taste 
1 24 oz jar of marinara sauce
3 cups chicken bone broth
1 10 oz package of cheese tortellini or pasta of choice*
1 cup heavy cream, half and half or canned coconut milk
Handful of spinach, optional 
Freshly grated Parmesan cheese to serve 

Instructions:
Heat olive oil in a dutch oven over medium heat. Add the sausage and break it up with a meat masher or wooden spoon until just browned, about 3 minutes, then add onion, garlic, salt, pepper, and Italian seasoning, stirring occasionally until the onion is translucent, 7-8 min. 
Add the marinara sauce and chicken broth and stir to combine. Bring to boil over medium high heat then add the tortellini. Cover, reduce heat to medium low and simmer for 10-15 minutes until the tortellini is cooked. 
Stir in the cream and spinach if using and season to taste. Serve with freshly grated Parmesan cheese on top!

*Depending on the pasta you choose you may need to add more broth. When reheating leftovers, you may need to add more broth as well.
