I didn’t like eggplants as a kid, but now I’m obsessed. Anyone else used to see it as an ‘older person’ veg?? 😅

When I shared this on stories a while back, I was surprised to see so many of you asked for the recipe! So here it is, finally hahaha. 

My “cheat’s” nasu dengaku (miso-glazed eggplant) that I keep on rotation. It’s easy, super yummy, and works with loads of dishes.

It’s a shortcut version because I skip the usual first step most recipes call for: pre-frying or baking the eggplant before adding the glaze. Turns out, it still works well. Bonus points if you’re not a fan of mushy eggplant.

I gotta admit, I rushed this batch so it turned out slightly paler than usual. But still delicious imo :)

Serve it with rice or soba and your go-to protein sides. I also love adding the cold leftovers to salads.
