We don’t let food go to waste in this household 🙅🏻‍♀️

Ordered a salad yesterday, but the sweet potatoes were so dry I just couldn’t get myself through it. I didn’t want to throw them out, so I turned them into something else! I totally winged it, but it turned out pretty okay. I’d actually make this again!

I’m thinking of giving it a protein boost next time with some tinned mackerel. It would make for a great quick & balanced snack on the go!

I honestly think some of the best recipes come from leftovers! Would you agree?
