If you’re craving pad kra pao (Thai basil chicken) but want something lighter – and quicker, this might become your new go-to!!

Rice paper is my ultimate pantry MVP. It’s affordable, long-lasting, and incredibly versatile. You can turn them into noodles, the crispiest chips, or you can wrap anything in it. 

And that’s exactly what I did with my Pad Kra Pao. Don’t get me wrong - I LOVE the traditional version with rice, but sometimes I’m too impatient to wait for it to cook!

I dare say this was the one of the yummiest meals I’ve made this month. And I like that its a lighter spin on the traditional version.

Bonus: it’s perfect for meal prep too. Just cook up a big batch of the filling, and roll fresh whenever you’re ready to eat.
