8 ounces Sharp Cheddar Cheese, shredded (226g)	
1 1/2 tsp Kosher Salt (6g)	
2 sticks Unsalted Butter, cubed and chilled (226g)	
1/2 cup Corn Kernels (70g)	
1/2 cup Scallions, sliced thin (20g)	
1/2 cup Creme Fraiche or Sourcream (117g)
