Hot Crab Dip
.
.
8 oz cream cheese, softened
1/4 cup sour cream
1/4 cup Kewpie mayo
1 tbls soy sauce
1 tbls Worcestershire sauce
Juice and zest of one lemon
2 cloves garlic, chopped
1/4 tsp salt
1/4 tsp pepper
1/2 tsp Old Bay seasoning
1 (1 lb can) crab meat
4 scallions, chopped
1 (4oz can) diced chilis/ drained
1/2 cup shredded white sharp cheddar cheese, divided
1/2 cup shredded mozzarella

¼ cup Thai sweet chili sauce, to drizzle on at the end

Preheat the oven to 425F.

Place the softened cream cheese in a large bowl with everything else. You’re only going to add 1/4 cup of cheddar cheese. The remaining 1/4 cup gets sprinkled on top before baking. Use a rubber spatula to carefully fold in the crab trying not to break it apart.
Spread the dip evenly into an 8” baking dish. I used an 8” cast iron skillet. Sprinkle the remaining 1/4 cup cheese over top. Cover with foil and bake for 20 minutes. Remove the foil and cook 10 more minutes or until bubbling. Remove from the oven and serve with the Thai sweet chili sauce for drizzling on top. I like to serve with crostini but you can serve with any cracker or toasted pita chip
