1/3 cup white miso paste
2 tbsp light soy sauce
3 tbsp honey
2 tbsp Dijon mustard
2 tbsp sake or white wine
4 tbsp avocado oil, divided
1 tsp white pepper, divided
4 cloves garlic, grated
1 inch piece ginger, grated
1 whole chicken (4-5 pounds)
4 large carrots, cut into 1 inch pieces
2 Japanese sweet potato, cut into 1 inch pieces
1 large white onion, quartered
1 tsp salt
 
1. In a bowl, add the miso paste, soy sauce, honey, mustard, sake, half of the oil, half of the pepper, garlic, and ginger. Whisk together until combined.

2. Remove any organs from inside the chicken cavity. Take a pair of Victorinox kitchen shears and cut out the spine of the chicken. Place it breast side up on a large plate and press down to butterfly the chicken. Cover all sides of the chicken with the marinade (including underneath the skin) and cover with plastic wrap and place in the fridge for 1 hour.

3. Preheat the oven to 400°F.

4. Add the vegetables to a baking tray. Combine with the remaining oil, salt and remaining pepper, then mix until combined. Add to the bottom of the roasting tray. Place the chicken breast side up on top of the vegetables and brush the top of the chicken with any leftover marinade.

5. Roast the chicken at 400°F for 1 hour or until the breast reads 160F. Remove from the oven and let rest for 15 minutes before slicing.
