🎄 Fried Calamari Siciliana | forget the Fried Calamari this year… make this Calamari Siciliana instead! It’s fried calamari in a white wine sauce made from garlic, lemon, parsley, and hot cherry peppers. It’ll steal the show this year for sure! 

Recipe is for 1lb of fresh calamari 

🦑 Fried Calamari 
1lb Calamari, cleaned and sliced into 1/2 inch strips 
1/2 cup of butter milk (or regular milk)
1/2 tsp salt 
1 1/2 cup flour
1/2 cup corn starch 
1 tsp baking powder
Oil for frying

🌶️ Siciliana Sauce
3 large garlic cloves, minced 
1/2 to 3/4 cup cherry peppers, roughly chopped (depending on heat level)
2/3 cup white wine
1/2 cup lemon juice
1 cup chicken bone broth
Parsley, as needed
Salt, to taste
1/2 tbsp corn starch 
1 tbsp water

Marinate the calamari in the milk and salt for 30 minutes, up to 2 hours

Mix the flour, corn starch and baking powder together. 

Add half the calamari to the flour mixture and mix until fully coated. Then transfer the calamari to a sheet tray lined with a wire rack (or colander) so excess flour falls off. 

Allow the calamari to rest in the fridge for at least 30 minutes so the flour hydrates. 

While the calamari hydrates in the fridge, begin to make the sauce. Add oil and garlic, and saute until fragrant and softened. Then add the chopped cherry peppers and cook for about a minutes. 

Deglaze the pan with white wine, and cook until the wine reduces by half. Then add in the lemon juice and chicken broth. Bring to a simmer, and cook until the sauce reduces. Once reduced set aside while you fry the calamari. 

Heat olive oil to 365-375º, in batches, carefully add the calamari and fry for 3-4 minutes or until golden brown and crispy.  Once done, remove and set aside on a paper towel lined dish/tray, then immediately season with salt. 

Finish the sauce by bringing it up to a simmer and adding the corn starch slurry. Mix until fully combined, then let the sauce simmer for 2-3 minutes. Add the fried calamari and as much parsley as your heart desires. Then toss until the calamari is fully coated with the sauce. 

Plate and top with more parsley.
