Makes 24 cookies⁣
1 cup unsalted butter⁣
2 1/2 cups gluten free 1:1 flour (I use bobsredmill 1:1) or regular all purpose flour (do not pack it in tightly, just level a measuring cup)⁣
1 tsp baking soda⁣
1 tsp salt (diamondcrystalsalt)⁣
3/4 cup brown sugar (or coconut sugar)⁣
1/2 cup granulated sugar⁣
1 egg + 2 egg yolks, room temperature ⁣
1 tb vanilla extract ⁣
1 1/4 cups chocolate chips (ghiradelli)⁣
3/4 cup toffee chips ⁣
24 teddy grahams (optional)⁣
⁣
Preheat oven to 350F. Brown the butter. Add the butter to a small saucepan over medium-low heat. Let melt, stir constantly until the butter foams and browns and you see brown bits on the bottom. Remove from heat, transfer to a bowl to let cool. Next, make the cookie dough. In a large bowl, mix together the flour, salt and baking soda. Set aside. Then, using a stand mixer or hand mixer, beat the sugars and cooled butter, about 3 minutes, then add in the eggs and vanilla, mixing 1 minute more. Add in half of the dry mixture, mixing on a low speed until just combined, then add in the remaining. Don’t over mix, especially if you are using regular AP flour. Fold in the chocolate chips and toffee bits. The dough will be thick, that’s great! No chill time required, but you can, up to 24 hours! When ready to bake, line two baling sheets with parchment paper. Use cookie scoop to form big balls (~ 3tb) of dough and place them 3 inches apart. Press a teddy graham on top of each one, if using. Bake 10-12 minutes on the middle rack in the oven. The edges should be golden and the top should be relatively soft. Remove from oven and let cool for a few minutes and enjoy!⁣
