One of my fave snacks and it’s so easy to make at home! These latkes pair great with a protein ranch dip made from lifewaykefir Farmer Cheese - dip any crispy potato in this mixture it’s SO GOO. Recipe is below! #LifeWayPartner

Latkes:
2 large Russet potatoes (about 1 pound) shredded into a bowl
1 large onion (8 ounces), peeled and then shredded into the bowl with the potatoes
2 large eggs
½ cup all-purpose flour
1 teaspoon salt & pepper & garlic powder
1 teaspoon baking powder
 oil, for frying

Directions: 
Once the onion an potato are shredded - Transfer the mixture to a clean dishtowel or cheesecloth  and squeeze and wring out as much of the liquid as possible.

Working quickly, transfer the mixture to a large bowl. Add the eggs, flour, seasonings  baking powder and mix until the flour is absorbed.


In a medium heavy-bottomed pan over medium-high heat, pour in about ¼ inch of the oil. Once the oil is hot (a drop of batter placed in the pan should sizzle), use a heaping tablespoon to drop the batter into the hot pan, cooking in batches. Use a spatula to flatten and shape the potatoes into  thin discs. When the edges of the latkes are brown and crispy (about 3-5 minutes) carefully flip. 

Cook until the second side is deeply browned, about another 5 minutes. Transfer the latkes to a paper towel-lined plate to drain and sprinkle with salt while still warm. Repeat with the remaining batter.

Protein Ranch Dip:::
1/2 cup Lifeway farmer cheese
3 Tbsp Lifeway Kiefer 
1/2 squeezed lemon
1/2 TBSP ranch seasoning

In a blender - blitz this together and serve with Latkes!
