🎄 Coconut Shrimp | I grew up eating this on Christmas Eve every year… but this time I’m elevating it with a Calabrian Chili Sweet Chili Sauce to pack in some sweetness and a little heat. 

You’ll eat a dozen of these easily! 

🍤 Shrimp 
1 pound large shrimp (raw), cleaned and deveined 
1 cup sweetened shredded coconut, plus more as needed
3/4 cup panko breadcrumbs, plus more as needed
2 eggs, whisked
Flour, as needed
Salt & Pepper
Oil for frying 

🌶️ Calabrian Chili Sweet Chili 
1/3 cup white wine vinegar
1/3 cup water
1/3 cup sugar
1 tbsp sherry
1 rounded tbsp Calabrian Chili paste
1 tsp chili flakes
2 large garlic cloves, grated
2 tsp cornstarch dissolved in 1 tbsp water

Start by making the sweet chili. Add all the ingredients to a small sauce pan and bring to a boil, stirring often, until all the sugars are dissolved. 

Once the sugars are dissolved, stir in the cornstarch slurry.  Bring the sauce to a simmer and cook, stirring often for about 4 minutes, or until slightly thickened. The sauce may look loose, but as it cools it will thicken up.

Remove from the heat, and allow the sauce to cool

Set up a breading station using three bowls. In one bowl add the flour, salt, and pepper.  In the second bowl whisk two eggs.  And in the third bow mix the shredded coconut with the panko breadcrumbs.

Pat your shrimp completely dry, then dredge in flour (shaking any excess off), then dip in the whisked eggs, then coat in the coconut/panko mixture.  Repeat this process until all the shrimp are breaded

Heat a large skillet over medium-high heat and drizzle with oil.  Shallow fry the shrimp in batches for 2-3 minutes per side, or until crispy.  Make sure the heat isn’t too high or the sugars from the coconut will burn. 

Once done, immediately season with salt and chopped parsley.  Serve with Sweet Calabrian Chili Sauce
