Stained Glass Gingerbread cookies shaped like mason jars! 🫙✨These will bring delight and something different to your holiday cookie boxes! I used crushed jolly rancher hard candy, but you could use cinnamon or any type of hard candy you’d like!
Recipe:
½ cup unsalted butter - softened (or shortening)
⅔ cup light brown sugar
3 ½ cups all-purpose flour, plus more for dusting
1 tablespoon ground ginger
1 ½ tablespoon ground cinnamon
⅛ teaspoon salt
½ cup heavy cream (or any milk)
½ cup molasses
Crushed hard candy. I used jolly ranchers.
Add the flour, ginger, cinnamon, and salt to a large mixing bowl. Sift to combine. Set aside.
Cream together the butter and the sugar with your electric mixer until just combined. Scrape down the sides.
Add the milk and molasses and stir on low until well incorporated. Add in the flour slowly. I like to use a large spoon and add a spoonful at a time until there’s no flour left. Stop periodically to scrape the side of the bowl to make sure everything is incorporated evenly. The dough should be dry but not crumbly. If it appears too crumbly simply add a splash of heavy cream or milk.
Pull dough out of the mixer and wrap in plastic wrap and refrigerate overnight.
When ready to bake:
Preheat the oven to 350°f. Divide your dough into quarters and roll each quarter out on a floured work surface. Use cookie cutters in desired shape. I used a mason jar cutter with a heart cutter inside, but the combinations are endless. Place your cut designs on a parchment lined cookie sheet. Add crushed candy to cut out details and bake until just set - usually 8-10 minutes. You must allow the candy to fully harden before attempting to move the cookies to a cooling rack. Once cooled you can decorate however you’d like with icing! Enjoy! #cookiebox #bakersgonnabake #christmascookies #cookieboxes #holidaybaking
