Green Goddess Goat Cheese Pasta 
Ingredients

●  4oz Montchevre Plain Goat Cheese Log
●  4oz Montchevre Honey Goat Cheese Log (frozen) 
●  1 lb pasta (Montchevre sent me rigatoni)
●  1 zucchini 
●  2 cloves garlic, smashed 
●  1 tsp red pepper flakes 
●  2 tbsp olive oil 
●  1 cup assorted fresh herbs (parsley, basil, mint, tarragon)
●  1 cup spinach 
●  Kosher salt 
●  Black pepper

Instructions
● Preheat the oven to 425. Slice zucchini in half lengthwise and season with salt. Heat an oven-safe pan over medium-high heat and add your olive oil. Pat the zucchini dry and transfer to the preheated skillet, cut side down. Cook undisturbed for about 5 minutes or until the zucchini starts to brown around the edges. Transfer to the oven and roast for about 7 minutes or until the zucchini is tender. Transfer the cooked zucchini to a cutting board and chop into 1-2 inch pieces. 

● Using the same pan and oil that the zucchini cooked in, turn the stove to medium and add the garlic and red pepper flakes. Cook until garlic is fragrant and slightly golden brown, about 1-2 minutes. Remove from the heat. 

● Bring a large pot of water to a boil, season with salt. Cook pasta according to package directions. 

● While pasta cooks, transfer the garlic, red pepper flakes, and olive oil from the pan into a blender along with the roasted zucchini, 4oz of Montchevre Goat Cheese, 1 cup of fresh herbs, 1 cup of raw spinach, a pinch of salt & pepper, and a splash of pasta water. Blend until smooth, adding more pasta water as needed. Taste and adjust seasoning accordingly. 

● Drain the pasta, reserving at least a cup of pasta water. Transfer back into the pot and pour over the Green Goddess Goat Cheese sauce. Mix to combine, adding pasta water as needed. 

● Plate the pasta and, using a microplane, grate the frozen Montchevre Honey Goat Cheese over the pasta. Serve and enjoy.
