the viral tiktok pink pasta 🥹💖🫶

We all know that beets and goat cheese make a perfect pair. Turns out, they also make a perfect pasta sauce. 

I chose to keep the beets raw here to preserve their bright pink pigment. In the past, I found that roasted beets lend a more muddy maroon color; however, I have not tried them in this particular recipe so feel free to prove me wrong!
