tuna poke bowl✨

Recently while I was on vacation, I fell in love with the tuna poke bowl served at the hotel’s beachside restaurant (below). So much so that I had it for lunch 4 days in a row. 

A month has passed, it’s 15 degrees in New York, and I desperately wish I could return to the beach. Unfortunately, that is not in the cards. So recreating that dish felt like the next best thing! Best enjoyed with a frozen piña colada.

You can eat this like a big salad, or what I like to do is use the bib lettuce to make lettuce wraps and dip in more ponzu.
