Dinner inspo for this rainy Monday: Eggplant Parm Bake 🍆🍝 Super simple vegetarian (could also be make vegan/gluten free subbing vegan cheese and GF breadcrumbs) dish that is all kinds of cozy. It starts with sliced eggplant roasted, then layered in a baking dish with my roasted garlic tomato sauce, parmesan, mozzarella, fresh basil and topped with toasted garlic bread crumbs.
