ONE SHEET PAN SHRIMP TERIYAKI  BOWLS🍤recipe follows🍤
An easy Weeknight Rotation that tastes as fresh and light as Spring feels.  Your whole family will love this weeknight dinner!  It is packed full of flavor and lots of veggies!  Give it a try!  XO Babs

🍤INGREDIENTS:  
Teriyaki Sauce💛 (you will have leftover sauce just store) 
1 cup soy sauce 
4 tbsp brown sugar firmly packed
2 tsp freshly chopped ginger or 1 tsp good quality ground ginger
1  cup water
4.5 tbsp mirin or white wine
4 tsp cornstarch 
Add all the ingredients except for cornstarch and water to the saucepan. Bring mixture to a slow simmer over medium high heat.  While this simmers, combine cornstarch and water to make a slurry.   When the sauce comes to a slow simmer, add cornstarch slurry to thicken.  Turn off heat and reserve.  

🍤INGREDIENTS:  
1 pineapple cut in 1 inch chunks 

8 oz snap peas, ends trimmed

1 or 2 red peppers cut in 1” squares

8 oz broccoli florets

1.5 lbs thawed shrimp - well dried

3 tbsp sesame oil, divided
Chopped green onion and sesame seeds for garnish

🍤INSTRUCTIONS:
Preheat the oven to 400°.  Toss the shrimp in 1 tbsp sesame oil and 2 tbsp teriyaki sauce, then set aside to marinate. Toss pineapple in 1 tbsp of sesame oil and 1 tbsp of teriyaki sauce.  Toss the rest of the vegetables with 1 Tbsp sesame oil and 2 Tbsp teriyaki sauce.  To a sheet pan covered in parchment and sprayed lightly with non-stick cooking spray, add the pineapple and vegetables in a single layer, keeping them separate on the sheet pan.  Make sure to use a large enough sheet pan and do not crowd vegetables - you don’t want them to steam. In oven for 15 minutes.  

Remove the pan from the oven and push vegetables aside to make room for shrimp.   Spread shrimp evenly in the pan and in for 5-9 minutes (depending on size of shrimp) or just until shrimp is pink.

Remove sheet pan from oven and drizzle 2-3 more of the teriyaki sauce over shrimp and vegetables and toss to coat.  The remaining sauce can be stored in the refrigerator.  

Sprinkle with chopped green onions and sesame seeds for serving.  Serve over rice, cauliflower rice, zoodles, etc. #shrimpbowls #easyrecipe #onesheetpanmeals
