Baked Reuben Casserole also known as Irish Lasagna ☘️recipe follows☘️ Straight from my cookbook, Celebrate with Babs. 
Who says you can’t enjoy a Reuben on St Patrick’s Day?! Mr Babs - ☘️ who is 100% Irish ☘️ - calls this his “Irish Lasagna.” It makes for a festive St Patrick’s dinner and is so fun, so delicious and so memorable.  Let me know if you make it and how you like it! ☘️ XO Babs 
☘️ INGREDIENTS:
6-8 slices rye bread (dark or light) divided 
1/2 lb Cooked corned beef, sliced 1/8” thick, chopped
1/2 lb pastrami sliced thick, chopped
14 oz sauerkraut, well drained
1 cup chopped sweet pickles
4 cups shredded Swiss cheese, divided
1 cup whole milk
3 large eggs, beaten
1/3 cup Thousand Island dressing
1 tbsp prepared horseradish
1 tbsp sweet pickle juice
1/4 cup mustard (Dijon or yellow)
☘️ INSTRUCITONS: 
Preheat oven to 350°  Spray a 9 x 13” baking dish with nonstick cooking spray

Cut 4 slices of rye bread into 2” squares.  Place remaining 2-4 slices (depending on size of slices) of bread into food processor and pulse to make fine bread crumbs.  Spread cubed bread evenly in the bottom of the prepared dish. 

Mix the chopped corned beef and pastrami together.  Cover the bread evenly with half of the chopped meat.  Then evenly top with the drained sauerkraut and chopped pickles.  Sprinkle with 2 cups Swiss on top of the sauerkraut layer.  Top with the remaining chopped meat.  Gently push down to compact the ingredients a bit.  Sprinkle with remaining 2 cup Swiss on top. 

In a medium bowl, whisk together the milk, eggs, Thousand Island dressing, horseradish, pickle juice and mustard.  Pour the mixture every over the casserole.  Top with the bread crumbs.

Cover with foil and bake 45 minutes, or until the cheese is melted and bubbly.  If you like your bread crumbs toasted, remove the foil the last 10 minutes of baking.  Remove from the oven and let rest for 5 minutes.  Slice and serve.  Keep leftovers tightly covered in the refrigerator for up to 5 days.  Freeze leftovers tightly covered with plastic wrap and foil for up to 3 months.  #stpatricksday #reubensandwich #reuben
