🍝Spoonful of wisdom for today…right from my grandmother. Try sitting down to eat as a family for a happier and healthier unit. This is easier said than done - right?  Busy schedules, work, sports, different eating habits, the list goes on….if you only have one day to eat together - make it Sunday.  Start Sunday Suppers 🍝 I promise you will see the payoff for years. My Grandmother’s sauce we called “gravy” and it took days to make.  Here is my simpler, easier version of “gravy”. Give Sunday Suppers a try, and let me know how it goes!  XO Babs🍝Marinara Sauce (aka Gravy)
🍝INGREDIENTS
1/2 cup extra virgin olive oil
1 large yellow onion, finely chopped
3 large garlic clove, minced
1/4 cup white wine
2 - 28 ounce San Marzano crushed tomatoes
3 tbsp chopped fresh basil
1 small rind Pecorino Romano or Parmesan cheese
1/2 tsp kosher salt or more to taste
1/4 tsp freshly ground pepper or more to taste
1/4 tsp crushed red pepper (optional)
1/4 tsp baking soda
🍝INSTRUCITONS:
In a dutch oven, heat the oil over medium heat until shimmering.  Add onion and sauté for about 5 minutes or until softened.  Stir in the garlic and cook until fragrant, about 30 seconds.
Add the wine and tomatoes, increase the heat to medium-high, and let the mixture come to a slow boil.
Once boiling, add the basil, cheese rind (if using), salt, pepper, crushed red pepper (if using) and baking soda.
Boil for a few minutes and then adjust the heat to medium-low and simmer for 1 - 1.5 hours.  Stir the sauce every 10-15 minutes, making sure its not sticking to the bottom of the pan.  Rinse one of the empty tomato cans with water, and swirl around to loosen the excess tomato, transfer the water from can to can to rinse.  Add this water sparingly to the sauce if it becomes too thick.🍝PASTA TIPS:
🍝4 quarts of water to one box of pasta.  You want to ensure that the water can get starchy enough.
🍝Salt after the water comes to a boil.  If you salt before, it will actually take the water longer to boil.
🍝Reserve one cup of the pasta water (collect the water right before you drain).  
🍝Cook pasta one minute less than the box instructions.  You want your pasta to be al dente #sundaysupper
