💕 Meatball Subs with my family’s homemade meatball recipe 💕 Ingredients: 1 cup freshly grated breadcrumbs from day-old Italian bread  3/4 cup whole milk
1½ lb 80/20 ground chuck
½ lb ground pork
2 extra-large eggs, slightly beaten
½ cup freshly grated Pecorino Romano cheese
3 cloves garlic, minced
1 tsp kosher salt
½ tsp freshly ground black pepper
½ cup chopped fresh parsley
½ cup sliced onion
1 batch Marinara Sauce 

Soak the freshly grated breadcrumbs in the milk for about 20 minutes. Then squeeze any excess milk from the breadcrumbs.
To a large bowl, add the ground chuck and pork, eggs, Pecorino Romano, milk-soaked breadcrumbs, garlic, salt, pepper, and parsley. With clean hands, mix everything until well combined. Cover and let rest in the refrigerator for 30 minutes while the flavors meld.
Remove from the refrigerator and mix the meatball mixture again lightly with your hands. Scoop out a ball of meat mixture using an ice cream or cookie scoop. Using a 1½-inch (3.75-cm) ice cream or cookie scoop, form the mixture.

The meatballs are cooked when they reach an internal temperature of 160°F (71°C). Bake the meatballs on a parchment-lined baking sheet at 350°F (180°C) for 25 to 30 minutes. They can also be broiled on high for a crispier. Another option is to let them cook in the sauce 40-60 min on simmer or cook in skillet: Coat a large skillet with about ⅛ inch (3mm) extra-virgin olive oil, and heat over medium heat. One hot, add ½ cup sliced onion to the oil for flavoring—the onion will be removed after the meatballs are browned #meatballs #meatballrecipe
