Blueberry Crisp
Serves 4

Ingredients 
Blueberry filling 
4 cups fresh or frozen blueberries 
1 tbsp lemon juice + zest 
½ tsp salt 
3 tbsp all-purpose flour 
2 tbsp maple syrup 

Crisp 
2 cups quick oats 
½ stick unsalted butter, salted 
1 tsp salt 
1 tsp cinnamon 
⅓ cup 
⅓ cup all-purpose flour 
½ cup brown sugar 

Topping 
Vanilla ice cream 
Fresh mint 

Directions 
Preheat oven to 350F degrees. Grease a medium baking dish with butter. Set aside.
In a large bowl, combine all the ingredients for the blueberry filling. Mix until combined and add to the baking dish. 
In a large bowl, combine all the ingredients for the crisp and mix until combined. Add the crisp on top of the blueberries in the baking dish. Evenly spread out the crisp mixture. 
Bake covered for 20-25 minutes. Remove from oven and uncover and bake for another 20-25 minutes. Let cool for 10 minutes before serving. 
Plate crisp and top with vanilla ice cream and fresh mint. Serve and enjoy!
