Burrata, Peach and Tomato Salad with a Honey + White Balsamic Vinaigrette 
Serves 4

Ingredients
1 burrata 
¼ cup cherry tomatoes, halved 
3 peaches, sliced 
4-5 heirloom tomatoes, sliced and chopped into 1-inch-thick pieces 
1 tbsp olive oil 
1 tsp salt 
Few cracks of black pepper 
2 tbsp pine nuts 
1 handful fresh basil 

Honey + White Balsamic Vinaigrette 
¼ cup olive oil 
¼ white balsamic vinegar 
1 tbsp Dijon mustard 
½ tsp salt 
Few cracks of black pepper 
1 tbsp honey 

Directions
1. Wash all produce and pat dry. Cut peaches and tomatoes and arrange on a plate. Add 1 tosp olive oil over top and salt. Add burrata to the center of the plate. 
2. Make vinaigrette by adding all ingredients to a measuring cup and mixing until combined. Set aside. 
3. Add pinenuts and basil on top of the tomatoes. Cut open burrata and top tomatoes and cheese with vinaigrette. Top with freshly cracked black pepper. Serve with toasted baguette and enjoy!
