there is nothing like a good pasta salad! especially one that is simple and quick to make! as a first time mom- simplicity is everything right now and this dish hits the spot! Plus, I always make extra dressing to use on salads and marinades! Find the full recipe below, enjoy xx 

Lemony Tomato Feta Orzo Pasta Salad 
Serves 4 

Ingredients 
1/2 lemon 
1 package orzo 
1/2 cup basil, chopped 
4 cups tri color grape tomatoes 
1/4 cup olive oil 
Salt & pepper 
1/2 cup crumbled lite feta 
Dressing 
1/3 cup olive oil 
1 tbsp honey 
1 tbsp Dijon mustard 
Salt & pepper 

Directions 
1. Preheat oven to 400°F. Add tomatoes to a small baking dish and top with olive oil, salt & pepper and lemon juice. Mix together and add to the oven and roast for 20-25 minutes. 
2. Bring a large pot of salted water to boil and add orzo. Cook according to box instructions. 
3. Meanwhile, make the dressing. Add all ingredients for the dressing in a small bowl. Mix together until combined. 
4. Once orzo is cooked, remove roasted tomatoes from oven and add to orzo pot. Mix together. Add crumbled feta and plate. Top with dressing and a drizzle of olive oil. Garnish with black pepper & chopped basil. Serve and enjoy!
