Spring Pasta Salad with a Lemony Caper & Shallot Vinaigrette
Serves 6

Ingredients 
Pasta Salad
1 box of pasta of choice 
1/2 lemon, juiced 
1 cup cherry tomatoes, halved 
1/2 red onion, thinly sliced 
1 can artichokes, halved 
1 cup walnuts 
5-6 asparagus sprigs, peeled 
1/2 cup feta, crumbled 
1 handful microgreens 

Lemony Caper & Shallot Vinaigrette 
1/2 lemon, juiced & zested
1 tbsp avocado oil 
2 tbsp capers 
1 small shallot, thinly sliced 
1/2 cup olive oil 
1 tbsp Dijon mustard 
2 tbsp honey 
2 tsp red wine vinegar 
salt & pepper
