tonight’s pregnancy craving calls for a taco salad using ground beef we had leftover from tacos the night before paired with a creamy chili-lime vinaigrette (which is definitely a chipotle dupe, if I do say so myself) 🌮 my husband loved it and so did I! for the full recipe, comment TACO and I’ll send it to you directly! xx 

Taco Salad with Chili-Lime Vinaigrette 
Serves 4

Ground Beef
1 lb lean ground beef
1 tbsp avocado oil 
1 tsp salt 
1/2 tsp black pepper 
1 tsp chili powder 
1 tsp cumin 
1 tsp paprika 
1 tsp onion powder 
1 tsp garlic powder 
1/2 tsp chili flakes 
2 medium jalapenos, diced 
1 red onion, diced 
1 red pepper, diced 
1 yellow pepper, diced 
2 cloves garlic, chopped 

Taco Salad 
2 large heads romaine lettuce, chopped 
1 jalapeno, thinly sliced 
1 cup shredded cheddar cheese 
1 can kidney or black beans, drained and rinsed 
2 limes, quartered 
3-4 taco shells, crumbled (I used siete) 
1/2 small red onion, diced 
1 handful cilantro, chopped 

Chili Lime Vinaigrette
1/4 cup olive oil 
2 limes, juiced 
1 1/2 tbsp honey 
1/2 tsp salt 
few cracks of black pepper 
1 tsp cumin 
1 tsp chili powder 
1/4 cup lite sour cream or plain greek yogurt
