Loaded Baked Potato Soup 
Serves 6 

8-10 Yukon gold potatoes, peeled and chopped 
4 cups whole milk 
½ cup Gay Lea Unsalted Butter 
½ cup Gay Lea Original Sour Cream 
4 cups chicken stock 
2 cups cheddar cheese 
4 slices bacon, chopped 
1 cup green onions 
¼ cup flour 
2 garlic cloves, chopped 
½ white onion, chopped 
Salt & pepper 

Directions 
Preheat oven to 420F degrees. Line baking sheet with parchment paper and add bacon to the lined baking sheet. Cook for 8 minutes per side. Once cooked, remove from oven and place on a plate with paper towel. Once cooled, chop bacon and set aside. 
Heat a Dutch oven or soup pot over medium heat, add in Gay Lea unsalted butter and garlic. Sauté for 3-4 minutes until soft and add in onions. Cook down for another 5-6 minutes. Add in flour to create a roux. Once roux is formed, add in potatoes, salt & pepper. Mix potatoes and cook for 5-6 minutes. Add in chicken broth and milk. Reduce temp to low-medium and bring to a simmer. Continue to stir. 
Once brought to a simmer, add in chopped bacon, green onions, Gay Lea Original Sour Cream and cheese. Mix together until combine and season as necessary. Leave on low heat for 30-35 minutes, stirring consistently. 
Once soup is ready, serve and garnish with green onions, bacon, cheese and a dollop of Gay Lea Original Sour Cream and black pepper. Serve and enjoy!
