pasta salad season is here! 🤌 & you have to try out my roasted veggie & walnut + arugula pesto pasta salad for the long weekend! most definitely inspired by my mom and all of her amazing summer pasta salads that she would make for us! find the recipe below, enjoy xx 

Pesto Veggie Pasta Salad 
Serves 4 

Ingredients
1 box rotini pasta
1 can chickpeas
1 can artichoke hearts
1 cup red + orange peppers, diced
1 cup arugula
1 cup tricolor cherry tomatoes, halved
2 tbsp olive oil
salt & pepper
Pesto dressing
2 cups basil
1/2 cup walnuts
1/2 cup pine nuts
2 garlic cloves
1/2 cup olive oil
1/2 lemon, juiced
1/2 cup arugula
Salt & pepper

Directions
1. Preheat oven to 375F degrees. Bring a large pot of salted water to boil. Cook pasta according to box instructions. Line baking sheet with parchment paper- add rinsed chickpeas, peppers, tomatoes and artichokes to baking sheet. Season with salt & pepper. Toss until coated. Add to oven and bake for 25-30 minutes. Check halfway and move veggies around. 
2. In a food processor, combine ingredients for pesto. Process until smooth and add to a dressing container. 
3. Once pasta is cooked- allow for it to fully dry and cool and then add to large bowl. Add veggies, arugula and pesto dressing to the pasta. Toss together until pasta is mixed and coated. Top with black pepper and enjoy!
