We’ve been friends for years, but never had the chance to cook together, and now we’re finally doing it! We used up that last pre-Passover challah and bread crumbs to make these crispy schnitzel sandwiches with matbucha (a long-cooked Moroccan-Jewish tomato spread) and crispy fried eggplant slices.
