talking about something that I have never shared before, which is the unhealthy relationship that I used to have with food. it’s taken years for me to open up about this, but just know that it’s so important to listen to your body and eat foods that will satisfy you and make YOU feel good 💘 love you all xx 

Whipped Feta Dip with Sizzling Shallot Oil & Roasted Tomatoes 
Serves 4 

Ingredients 
Whipped Feta 
8 oz. Feta cheese, crumbled 
1/4 cup olive oil 
1/4 cup whole milk 
2 tbsp honey 
1/4 cup cream cheese 
1/4 cup water 
Black pepper 
Sizzling Shallot Oil 
1 small shallot, diced 
1/4 cup basil, chopped 
2 tbsp pine nuts, chopped 
1 tbsp chili flakes 
1 garlic clove, chopped 
1/2 cup grape seed oil 
Roasted Tomatoes 
2 cups cherry tomatoes 
1/4 cup olive oil 
Salt & pepper 
1 garlic clove, grated

Directions 
1. Preheat oven to 400F degrees. Wash tomatoes and add to baking dish. Season with olive oil, salt, pepper and garlic. Mix together and bake for 25-28 minutes until tomatoes are roasted. 
2. Combine all whipped feta ingredients into a food processor or blender. Mix together until smooth. Add to a bowl. 
3. Combine all ingredients for sizzling shallot oil in a bowl. Heat oil in a saucepan of skillet. Once it’s heated - the oil should be shimmering, add to a bowl and mix ingredients together. 
4. Add roasted tomatoes on top of whipped feta dip followed by sizzling shallot oil. Top with black pepper and a few crushed prune nuts. Serve with roasted baguette and enjoy!
