Serves 2 
Ingredients 
• 1 can chickpeas, drained and rinsed 
• 1/2 red onion, diced 
• 1/2 cup celery, diced 
• 1/3 cup olives, diced 
• 1/4 cup lite feta, crumbled 
• 1 bunch parsley, chopped 
• 1 cup cherry tomatoes, halved 
Dressing 
• 1/2 cup olive oil 
• 1 lemon, juiced 
• Salt & pepper
