SALMON RICE BOWL✨ 

@jenniferaniston may have eaten a Cobb salad on the set of friends for ten years straight, but I eat my salmon rice bowl almost every single day because it’s that good! 😂 I’m working on the perfect Cobb salad recipe for you all, but in the meantime- trust me, you’ll want to eat this salmon rice bowl! It’s tasty and super easy to make. Find the recipe below, enjoy xx 

Spicy Salmon Rice Bowls 
Serves 2 

Ingredients 
8 oz salmon 
1 cup rice 
1 avocado, sliced 
1/4 cup scallions, chopped 
1/3 cucumber, sliced 
1/4 cup soy sauce 
2 tbsp honey 
1 tsp chili flakes 
1 tbsp rice wine vinegar 
1 tbsp sesame oil 
1 bunch cilantro 
2 tbsp sesame seeds 
Salt & pepper 
Spicy Mayo 
1/2 mayo 
1/4 cup sriracha 

Directions 
1. Cook rice in rice cooker. Make sure to wash it 3-4 times before until water is clear. 
2. remove skin from salmon and slice into cubes. Add to a baking dish or bowl. Combine soy sauce, sesame oil, honey, rice wine vinegar and chili flakes in a small bowl. Mix together. Season salmon with salt and pepper and add sauce overtop. Cover with sling wrap and place in fridge for 30 minutes. 
3. Remove salmon from fridge. Spray airfryer with avocado oil spray and add salmon. Cook at 400F for 10-12 minutes until salmon is cooked and browned. Remove from airfryer. 
4. Once rice is cooked, add to a bowl and plate. Top with salmon bites, sliced avocado + cucumbers. Finish with sesame seeds, scallions and spicy mayo. Combine cilantro and scallions with soy sauce and drizzle overtop of the salmon. Serve immediately and enjoy!
