TZATZIKI with PITA CHIPS✨

I am a dip girl! anyone else? I am OBSESSED with dips! I always have dips in my fridge and I put them on everything! Pizza, salad, salmon - you name it! I can pair a delicious dip with just about anything 😊 really excited to share with you my tzatziki recipe! And after a week hiatus from cooking- I’m back!!! find the recipe below, enjoy xx 

Tzatziki with Pita Chips 
Serves 2 

Ingredients 
1 1/2 cup plain greek yogurt (I used 2%) 
1 large cucumber, grated 
1/4 cup dill, chopped 
3 tbsp mint, chopped 
1/2 lemon, juiced 
1 garlic clove, grated 
Salt & pepper 
2 tbsp olive oil 
Pita chips 
2 whole wheat pitas, cut intro triangles 
1 tbsp olive oil 
Salt & pepper 

Directions 
1. Preheat oven to 375F degrees. Line a baking sheet with parchment paper. Set aside. 
2. Grate cucumber into a large bowl. Add a cheese cloth to a separate bowl and add grated cucumber into the cloth. Squeeze out all excess liquid and let side for 20-30 minutes. 
3. Cut pitas into triangles and add to lined baking sheet. Drizzle with olive oil, salt & pepper. Add to over and bake for 15 minutes. Flip halfway. 
4. Add Greek yogurt and grated garlic to a bowl. Mix together. Add in grated cucumber, chopped dill, mint. Mix together until combined. Add in lemon juice, salt & pepper. Mix together. 
5. Drizzle olive oil over top of the tzatziki and garnish with mint. Remove pita chips from oven and add to a bowl. Serve with pita chips and enjoy!
